Roasted Pumpkin Seeds

Extract the seeds from the Pumpkin.
Wash them well in a colander, to get rid of all the pulp.
Pat dry, put in roasting pan.
Sprinkle with Olive Oil and salt (other seasoning to taste), spread thinly in the pan.
Roast for 10 minutes, then stir with a spoon and roast for another 5-10 minutes until roasted and crunchy.
Scrape into a bowl, add more salt/seasoning, enjoy!
